The wine is produced using spontaneous fermentation without added selected yeasts, and it undergoes no filtration. The grapes are harvested manually from clay and limestone soils at the end of September, and the wine is aged in stainless steel tanks for 10 to 12 months before bottling.
This wine is produced by Tenuta Demaio using 100% Bombino Bianco grapes. The wine undergoes spontaneous fermentation and is re-fermented in the bottle with must from the same harvest. It has a refreshing, slightly cloudy profile with notes of ripe yellow fruits and Mediterranean herbs.
